That said, it seems the single biggest factor is town prosperity, and 3,000 is pretty low. My single best workshop at the moment is a smithy in Sanala that I set up just to try to get my game to cough up the Masterwork armor. Sanala is sitting at almost 11,000 prosperity and the workshop is doing +500 to +600 daily (and Sanala doesn’t have 1.7.2 workshop video --- The crafting system in Bannerlord is somewhat limited when compared with other RPGs, but that doesn’t mean that it isn’t lucrative. You need to unlock higher tier blades t make more money, and to do that, you need to smelt down the type of weapon you want parts for. Make some cheap 2-hand swords, or buy some, and smelt them down. Get that Curious Smith perk. Little by little you will acquire more parts.
